'Australia's Favourite Foodies Share their Secrets'

Q: What's the difference between creating a gourmet meal and a gourmet drink?
I like to think of creating a gourmet cocktail as one that is made especially for an occasion. So the drink always changes depending on the situation. For example, I've just cooked up a big batch of caramelised pear and ginger, a flavour ingredient in some daiquiris I'm going to mix for 20 ladies tonight. Pear being a dessert fruit of choice for many gastronomes, I'll throw it together with some yummy rum, fresh lime and sugar -a sweat treat. The difference is they'll have four of these drinks but would never have four helpings of dessert? Ha ha! read more |

“I knocked myself unconscious twice in one day practising one trick," Sydney-based cocktail king Hayden Wood confesses high-spiritedly, "It was on the back lawn when I was much younger. I'd been practising with a liquor bottle filled with water, trying to catch it behind my back It came down out of control and hit me on the hip.”
"I was a skinny boy and the pain went down my foot, back up my body and set off a light bulb in my head that took me to la-la land. |

My brother appeared just as I was waking up and said, 'what were you doing?' I showed him and knocked myself out again.” read more |

'Party Like a Star at Home' |

There are parties, and then there are unforgettable parties, remembered with a gleeful smile by those who attended and a wistful sigh by those who went elsewhere that night. |

Hayden Wood, director of MONDO Bartenders and author of Woody's Liquid Kitchen, says: “Cocktail parties and dinner parties at home are very fashionable now because of the renovaion craze. People are house-proud and want to entertain at home.“ |

Dispite his prowess in the kitchen and swag of international accolades, Hayden Wood just wants to be known as Woody, the bloke who mixes a mean cocktail. He's admittedly enjoyed drinking margaritas from a tin cup, and still loves simple concoctions with ingredients “smashed up“ in minutes in a blender, but Woody can't deny his title as Australia's celebrity cocktail mixologist. |

'Just Add a Dash of Fun' |
|
Let’s just get things straight here. Wood – or Woody as everyone calls him – probably won’t stand still long enough for anyone in the audience too see just how expertly he chops, juices, mixes, and shakes or to count exactly how many drinks he makes.
Picture Tom Cruise and Bryan Brown in Cocktail, but many times faster and flashier.

There is no greater horror when hosting a party than the deathly silence that follows after your guests have run out of things to talk about. Woody says the best way to avoid this situation is to give them something to do. “Always encourage your friends to mix the drinks as well“ he says “Make it fun. You don't really want to make it too complex.“ read more |

'Summer Time Show-Stopper' |

If you’ve ever seen Hayden Wood, better known as Woody, in action (he’s a regular at food shows in Australasia) you will know he is a true showman. He is a bartender extraordinaire who can throw bottles about the place like nobody’s business.
But the true test of his mixing skills lies at the bottom of the glass, a place that is all too rapidly reached when drinking one of his fabulous cocktails. Woody also has a knack for creating simple cocktail recipes, making it very easy to produce a batch of stunning drinks to share with friends on any summer occasion.
Matching food to mixed drinks can be tricky. Simple snacks will work well, but for those who like something a little more glamorous than salted nuts, I have created recipes with Woody’s sensational flavours in mind. read more |
